You are either gonna control the situation or it is gonna control you, so you need to make sure that the former is the case. This is an opportunity for you to show that you can handle adversity or, alternatively, that you struggle with it, so be proactive. If your sickness is something that allows you to get where you need to be but not to be at your best (such as a cold), then take some medicine and acknowledge the situation. I had a cold while interviewing and had it largely suppressed by by way of medication for much of the day. When it wore off and I had a bought of coughing during one faculty visit, I made some joke about unseen forces trying to stop me, asked if I could quickly take a water break, and then went back to business. Fortunately, I was able to reload before the job talk. I did have to take a restroom break between meetings so that I could grab some tissue for my nose, because it is hard to be taken seriously when you are either ignoring a runny nose or wiping it away with the day's schedule.

If its the flu or a major illness, you should probably talk with the chair. I would certainly not appreciate someone showing up who had anything more than a cold, as it could make me sick. The worst case is that you do not get a position, but do you want to be at a place where they don't care if you are moderately ill?
