This may be a silly question but it's my first time on the market and I'm not sure how everything works yet...
I'm applying to a few non-TT jobs this year for various reasons. I'm wondering if it's standard practice for schools to go through the same interview process for these jobs as they do with Tenure-Track, Assistant Professor jobs. I'm sure these departments interview several candidates by phone but I wonder if they invite many for on-campus interviews. Would they use their resources for on-campus visits for an instructor position?
Any thoughts are appreciated...

I have some colleagues who went into non-TT jobs and the hiring process was the same for TT-jobs.

It really depends. If it's an R1 or SLAC VAP, you may still have to interview (not the full blown interview of a TT position but it may take a day). If it's at a small public, you may or may not be formally interviewed. Usually a strong recommendation (especially if you have teaching experience) is good enough for a small public. As for how many people are interviewed, most institutions only interview one person (and that's if they even conduct an interview). Other applicants are often considered back-ups in case the candidate they wish to pursue declines. These things usually depend on the amount of resources an institution has, but typically, fewer resources are invested into searches for VAP, instructor, and lecturer positions.

When I applied for visiting teaching jobs in the summer, I was offered a phone interview only for a handful of searches at different types of institutions, but these were jobs posted in June or later and interviews didn't start until July. In all of the searches, three or more candidates were still interviewed. Now I'm interviewing for a visiting position at a highly selective school, and they are doing a larger group of phone interviews followed by three flyouts. Hope this helps.
