I am wondering whether, how, and where people are mentioning that they had an interview at ASA in the cover letter. I specifically have in mind an informal sit down outside of the employment service with the chair of the hiring committee. Is this something to put in the first paragraph? In the closing paragraph? What to say, other than I enjoyed meeting you and learned that I would be a good fit for the department/university. I find this awkward and hard to write for some reason...Any thoughts are appreciated.

I would mention it near the end, and just say that you enjoyed your meeting with them at ASA. Maybe mention something specific that impressed your or excited you. But don't "remind" them, and don't make a huge deal about it.
Just my two cents.

I agree with guido. I think it's a good idea to mention it at the end briefly. It can't hurt!

I think it's a good idea, for two reasons:
1. The person(s) reading your letter may not have been the person(s) you met with at ASA, so it instructs the person(s) reading your letter to call up the person(s) you met with and ask about how awesome you were.
2. It helps signal that the letter isn't a form letter--you took some time to mention your meeting with a person from the school.
