Is it appropriate to update a search committee if you have an article accepted for publication? And is it only worth contacting them if it's an article in a top journal?
Are there any other times you would contact/update a search committee? When you have another job offer?

Yes, I think that's appropriate. Often it just means emailing a new CV to include in your file.

Yes, in both cases tell the Search Committee, at least at the schools where you seriously intend to go. Keeping them informed is also a clear message that you're interested enough in them to stay in their consideration, and that you're an attentive, responsible sort of person (ideal future committee colleague).

As long as it received a "peer review," I'd send it. It doesn't matter if it's a lower tier (regional) or specialty journal. As long as it's a recognizable journal (not some random journal that no one has ever heard of), it would help your candidacy in most departments. I wouldn't bother updating the committee though if it's something trivial (e.g., encyclopedia entry).

What about a conditional acceptance? Is that worth updating SCs about, or should I wait until it's accepted outright?

I would say a conditional acceptance is definitely worth updating about.

So, how would I actually go about doing it? Sending an email to the chair of the committee, along with an updated CV? What if I don't know who exactly the chair of the committee is (or who is on the committee, for that matter)?

I would first try to contact the Dept. secretary via phone. They can usually tell you what the best course of action would be.

Thanks for the tip. If I do know who the chair is, should I just send an email saying that I had a paper conditionally accepted and that I've attached an updated CV?

I sent an email to several SC chairs or administrative assistants with just a brief note explaining that I'm sending an updated CV due to a conditional acceptance. I actually heard back from most the places, typically a thanks and congrats. So, I hope it's a good idea.
