Two-pronged question: 1. In sociology, are encyclopedia entries typically peer-reviewed? 2. How does the encyclopedia entry revision process (assuming it exists) typically function in our discipline?

Encyclopedia entries (like all edited collections) usually don't count as peer-reviewed. But you may get comments and suggestions for revisions from the editor. When I've done them, I'll send in a draft, get a few minor comments back, and then revise accordingly.
Encyclopedia articles are an easy line on the CV. Accordingly, they don't carry much weight. But they can be a good exercise and deadline to structure a literature review for later adaptation.
