When departments ask only for a letter and a CV, when do they usually start asking for more materials from candidates they're interested in? UW-La Crosse is an example.
It doesn't seem like it would take too long to go over just CVs and letters, and these places don't want to fall behind other places.

It just depends on the search committee as to exactly "when" they might want the stuff. For sure, it won't be until at least the next stage (first long list). As to when the first long list might be made, it all just depends on the search committee. Just a note though, when a search committe asks for only certain things, it's best to just send those specific items (nothing more). Some committee members get easily annoyed at candidates who cannot follow instructions (even though most are usually a bit more forgiving). The only time you should include more is when the ad is a bit vague as to what they want (e.g., evidence of teaching excellence).
