Anybody know of good affordable software for automatically converting an audio interview into a written document??

I don't know a software especially for that, but one thing you can do is upload the audio as a private video on Youtube (not sharing with anyone) and then download the auto-generated captions. They will come with timestamps for each line. They don't recognize different speakers though, but still do most of the work and I would assume Google has one of the best speech-to-text recognition software.
There might be speech-to-text apps in play store/app store.
